Healthy-ish ANZAC Biscuits

I've been to Gallipoli, it was a very scary bus ride followed by a very scary ferry trip.  Nothing of course can compare to the journey and subsequent sacrifice that 1000's of brave Aussie and New Zealand soldiers made 100 years ago.

One hundred years ago Australia, the nation as we know it was born.  Not in the true sense as it was discovered long before that, but in the coming together of people and the strength needed to build a democracy.  The ANZACs gave their lives for the nation that we know today and the world that we live in and for this I am thankful.

So, if like me the Last Post brings you to tears, there is nothing more fitting to eat tomorrow than an ANZAC biscuit.  There are so many recipes out there.  Let's be honest, mine is a modernised version.  But it fits with my cupboard contents.  Which is how the original came to be- it was a make-do biscuit.

Healthy-ish ANZAC Biscuits

Ingredients
1/2 cup of oats
1/2 cup of flaked quinoa
1 cup flour
2/3 cup coconut sugar
2/3 cup dessicated coconut
125 grams of butter
2 tbsps rice malt syrup
1/2 ts bicarb soda

Method
Preheat oven to 180 degrees.
Over medium heat melt the butter and rice malt syrup in a sauce pan with 3 tbsps of cold water.
When melted stir in the bicarb.
Add the wet ingredients to all the dry ingredients and mix well.
Take tbsps of the mixture and roll into balls.
Flatten slightly on lined trays.
 Bake for 8-10 minutes or until starting to golden.
Cool on the tray for 3 minutes.
Cool on a wire rack until crispy.Makes approx 16 biscuits.
