Sausage and pea pasta sauce

So.  I normally have a big stash of sugo in the freezer ready to go.  I am normally organised like that...but last night when I raided my favourite tupperware in the fridge there was no sugo.  Not only was there no sugo but I had put the container back in empty, thus giving me the illusion of an endless supply.

What to do? I'd promised the kids pasta!  So this was a quick, slap-it-together-in-five-minutes job that well and truly served the purpose- the mini kidgredients emptied their bowls!

Sausage and Pea pasta sauce
Ingredients
1 jar passata (700grams)
4 thin beef sausages
1 onion, diced
2 cloves garlic crushed
2 tablespoons olive oil
1 teaspoon dried oregano
Method
Chop the sausages into 1 cm thick rounds.
Add the oil to a fry pan over medium heat.
Fry the sausages until browned.
Add the onion and garlic and fry until the onion is translucent.
Add the passata and oregano and bring to the boil.
Simmer for 5 minutes.
Serve hot over pasta (we did zoodles too) with parmesan cheese.
Easily serves 4.  We got 2 adults and two kids serves out of this- with two kids serves to freeze.
