Orange and Mustard Honey Salmon Skewers

Salmon is a recent addition to our menu planning.  Previously, it was a food that was eaten smoked only.  But now, with the help of skewers and marinades (self made) we've managed to eat two different salmon meals.  I'm calling it.  Mummy 1, mini kidgredients 0. 

So this dinner was such a winner that I wasn't actually able to take it off the skewers before my pair were munching away. 

Orange and Mustard Honey Salmon Skewers
Ingredients
3 pieces of salmon (centre cuts)
2 tbsps wholegrain mustard
2 tbsps olive oil
zest of an orange
juice of an orange
2 tbsps honey

Method
Soak wooden skewers for 20 minutes.
Chop the salmon into 2.5 cm cubes.
Thread the pieces onto skewers, I do 4-5 chunks depending on thickness.
Mix all the marinade ingredients in a jug.
Pour over the salmon skewers and marinate for 30 minutes in the fridge, turning a few times.
Heat a frypan over medium heat. 
Cook the skewers until they are cooked to your preferred cooking, turning frequently and basting often with the marinade.
Makes 10-12 skewers.
