Lemon and Coconut Slice
Ingredients
1 cup self raising flour
1/2 cup rolled oats
1/2 quinoa flakes
1 cup dessicated coconut
1 egg
125 grams butter
2 tablespoons golden syrup
Icing:
1 cup icing sugar
1 tablespoon butter
1 tablespoon lemon juice
Method:
Preheat the oven to 180 degrees
Mix the dry ingredients
Beat in the egg
Melt together the butter and golden syrup
Add and mix well
Press into a lined 8" square pan
Bake 15-20 minutes- until golden brown.
Allow to cool
Mix the icing ingredients. Ice the slice then top with extra dessicated coconut.
Makes about 20 squares.
